1/4 cup light brown sugar
3 tablespoons kosher salt
1 tablespoon freshly minced ginger, the skin removed
2 medium yellow onions, peeled, roughly chopped
4 cups green cabbage, washed, roughly chopped
2 carrots, washed, peeled, cut into thick rounds
2 cups italian parsley, washed, leaves only, roughly chopped
4 garlic cloves, skins removed, finely chopped
1/4 cup white vinegar
1 tablespoon nam pla or nuoc mam, fish sauce (optional)
1 pound good quality pasta
2 tablespoons sweet butter (optional)
2 tablespoons olive oil
Sea salt and black pepper
1/2 cup freshly grated parmesan or romano cheese
