Ingredients

1 tablespoon grapeseed or extra-virgin olive oil
1 medium red onion, finely chopped

1/2 cup chopped carrot
1/2 cup chopped celery
3 garlic cloves, minced
2 tablespoons minced, peeled fresh ginger
1 tablespoon curry powder
2 large tomatoes, peeled, seeded, and chopped, or 1 cup tomato sauce
1 bay leaf
4 cups vegetable or low-soduim, fat-free chicken broth
1 cup dry quinoa
1 1/2 cups cooked black beans, or one 15-ounce can, rinsed and drained
3 tablespoons natural peanut or almond butter
1/4 cup chopped fresh cilantro
1/2 pound baby spinach leaves, or other greens, torn into bite sized piece
Salt and pepper to taste
