1 lb. beef top sirloin, fat trimmed, cut in half lengthwise
2 tbs. minced fresh lemongrass (from bottom 6 inches of the stalk)
2 tbs. asian fish sauce
1 tbs. low-sodium soy sauce
1 1/2 tsp. sugar
2 large shallots, minced
Freshly ground pepper, to taste
4 tbs. peanut oil
3 tbs. fresh lime juice
1 1/2 to 2 serrano chilies, seeded and minced
Coarse kosher salt, to taste
1 head red leaf lettuce, torn into bite-size pieces
3/4 lb. bean sprouts
4 persian cucumbers, halved lengthwise and sliced crosswise
1 cup packed fresh basil leaves, preferably thai basil
1/3 cup packed fresh mint leaves
1/2 red onion, thinly sliced
