1 teaspoon nutmeg
1 tablespoon olive oil
4 large carrots, peeled and chopped
1 small yellow onion, chopped
10 ounces cremini mushrooms, cleaned and chopped
1 1/2 cup frozen chopped spinach, defrosted and drained of excess water
1 pint part-skim ricotta cheese
1 package no-boil lasagna noodles
10 ounce fresh mozzarella, thinly sliced
