14 ounces beef cutlets, thinly sliced
Olive oil, for brushing
Sea salt and freshly ground black pepper
2 cups whole wheat or regular couscous
1 1/2 cups organic chicken stock
2 firm but ripe avocados
Cilantro leaves, for garnishing (optional)
Lettuce leaves, for serving
For the dressing:
1/2 cup olive oil
Grated zest of 1 lemon
1/4 cup fresh lemon juice
1 clove garlic, crushed
1 2 fresh green chilies, finely choopped
1/3 cup cilantro leaves, chopped
Sea salt, to taste
