Ingredients

2 1/2 pounds veal or beef cut in 1 inch cubes
3 tablespoons all purpose flour
7 tablespoons extra virgin olive oil
3 ounces bacon, cut into strips
1 cup good red wine
3 cups vegetable stock, warmed
1 celery stalk, sliced to medium thickness
2 medium sweet onions, diced thinly
1 head of garlic, roasted (reserve 1 tbsp for use)
2 medium carrots, chopped
1 1/2 cup button mushrooms, sliced
5 fresh sage leaves
1 teaspoon fresh thyme leaves
2/3 cups heavy cream, for sauce
3 tablespoons all purpose flour, for sauce
Salt
Pepper, freshly grated
12 ounces pre-rolled puff pastry sheets (if frozen thaw overnight in fridge)
1 egg yolk
Turnip, potato, and celery mash (see note at bottom)
