2 cups carrots, peeled and grated (4-5 medium carrots)
1 medium apple, cored and grated (no need to peel it)
4 eggs
3 tablespoons maple syrup
1/2 cup coconut oil (or softened butter for non-paleos)
1 teaspoon vanilla
Zest and juice of one naval orange
1 cup dried sour cherries, chopped
1 cup shredded coconut
