1 tbs. montreal seasoning
2 tablespoons olive oil
3 carrots, cut into 1 inch pieces
3 celery ribs, cut into 1 inch pieces
2 medium onions, cut into 1 inch piece
1 head garlic, smash the cloves
3 tablespoons tomato paste
1/3 cup balsamic vinegar
1 1/2 cups red wine
2 bay leaves
2 thyme sprigs
2 cups reduced-sodium beef broth
1 cup water
3-5 yukon gold potatoes, cut into 1 inch pieces
8 oz. white mushrooms, cut in quarters
